Meaty dishes
  • When using ham in a recipe make sure you use ham carved off the bone, which has a succulent and dry texture much better than flabby pre-sliced ham from packs.
  • To pan fry a steak properly, preheat a flat or ridged pan over a high heat and add a small amount of olive or sunflower oil. Pat the meat dry and place in the frying pan, cook for an equal amount of time on each side until done as desired. Add a noisette of butter in the final minute of cooking.
  • Don't add salt to steaks until after cooking to avoid drawing the juices.
