Sweet stuff
  • To make perfect Chantilly cream place your bowl and whisk in the freezer for 10 minutes and make sure you use whipping cream.
  • When separating eggs for meringue, don't allow any trace of yolk to get in with the whites – or they won't whisk up nice and stiffly.
  • When making Crème Brulée add one whole egg to the yolks to make sure it sets properly.
